Mutton Korma – A Royal Mughlai Delight


Mutton Korma is a rich, creamy, and aromatic curry that originates from Mughlai cuisine. Made with tender pieces of mutton slow-cooked in a luscious gravy of yogurt, nuts, and fragrant spices, this dish is perfect for special occasions. The blend of cashews, almonds, and ghee gives it a royal touch, making it a favorite across generations.

Ingredients:

For the Marination:

  • 500g mutton (goat/lamb)
  • 1 cup thick yogurt
  • 1 tsp turmeric powder
  • 1 tbsp ginger-garlic paste
  • 1 tsp salt

For the Gravy:

  • 3 tbsp ghee or oil
  • 2 onions (sliced)
  • 1 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 2-3 cloves
  • 2-3 green cardamoms
  • 1-inch cinnamon stick
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 10-12 cashews (soaked and blended into a paste)
  • 1/2 cup fresh cream (optional)
  • Salt to taste
  • 1/2 cup water
  • Fresh coriander leaves for garnish

Step-by-Step Instructions:

Marinate the Mutton

  1. In a bowl, mix mutton with yogurt, turmeric, ginger-garlic paste, and salt.
  2. Let it marinate for at least 2 hours (overnight for best results).

Preparing the Gravy

  1. Heat ghee in a pan and sauté the sliced onions until golden brown.
  2. Add ginger-garlic paste and sauté for another minute.
  3. Add cumin seeds, cloves, cardamom, and cinnamon. Stir until aromatic.
  4. Now, add coriander powder, turmeric, red chili powder, and garam masala. Mix well.

Cooking the Mutton

  1. Add the marinated mutton to the pan and cook on medium heat for 10-15 minutes.
  2. Stir in the cashew paste and mix well to give the curry a creamy texture.
  3. Add water, cover, and let it simmer for 45-50 minutes until the mutton becomes tender.
  4. Stir in the cream (if using) and cook for another 5 minutes.

Serve & Enjoy!

  1. Garnish with fresh coriander leaves.
  2. Serve hot with naan, roti, or fragrant basmati rice.
